Cod And Green Pea Omelette With Sweet And Sour Sauce

Ingredients

Cod 100g
Onion 1/4
Frozen green peas 2 tbsp
Cress 1/4 pack
Eggs 2
Salt & pepper, & oil as required
Chicken stock 200ml
Soy sauce, sugar & vinegar 1 tbsp each
Potato starch in water 2-3 tsp

Method

I used green peas and cress this time, but use your favourite vegetables.

Put the chicken stock and the ingredients below it in a pan and bring to the boil. Add the potato starch in water. The sweet and sour sauce is ready.

Heat up the oil in a small frying pan and cook the sliced onions, then add the cod chunks.

Brown the cod.

Add the green peas from frozen.

Sprinkle over the cress. Pour over the beaten seasoned egg over and around in the pan. Put into a hot oven (220C) for 10 minutes.

When the top is nicely browned, carefully touch the centre to check if it's firm. Pour the sweet and sour sauce over the top - it's ready!

Tips & Note

I used a 15cm pan for 1 person. When you take out the pan, the cod will keep cooking, so it might be better to take it out a bit earlier.
