Crispy Shallow Fried Skate Wings

Delicious as a snack for kids, eat while it's hot!

Ingredients

Skate (thinner edge) 3-4
Salt & pepper as required
Olive oil as required

Method

Wash the skate in running water and pat dry well.

Cut the outer thinner edge of the skate (about 5cm wide) with kitchen scissors.

Slice into bitesize pieces and season one side with salt & pepper.

Put lots of olive oil into a frying pan to shallow fry the skate. Put in the skate and put on the lid (otherwise it will explode). Fry on low heat.

When the skate is nicely browned, turn it over and keep frying until very crispy.

Tips & Note

The skate contains moisture, so pat dry as thoroughly as possible before frying.
Start with the lid on to avoid being splashed with oil, but you can take the lid off when it starts getting crisp.
