Anchovy Millefeuille Bites

You won't be able to resist the crunchy filo pastry and the saltiness of the anchovy! A dream with a cold cold beer!

Ingredients

Filo pastry sheets 6
Onion (medium) 1
Mushrooms 10
Anchovy fillets 10
Olive oil as required
Parmigiano reggiano as required

Method

Preheat the oven 200C. Put some aluminium foil on an oven tray. Lay the first filo pastry sheet on top and brush with 1 tsp olive oil.

Sprinkle over 1 tbsp grated cheese. Repeat 6 times to get cheesy filo layers.

Thinly slice the onions and mushrooms and lay evenly across the top. Finely chop the anchovy and sprinkle over the top.

Sprinkle once more with 2 tbsp grated cheese and put in the oven for 30 minutes.

The filo will brown nicely. Cut to your preferred size and serve.

Tips & Note

The edges of the filo might burn, so fold the aluminium foil over the edges of the pastry.
