Pasta & Seafood Savoury Pancake (Okonomiyaki)

Ingredients

Spaghetti 60g
Self raising flour 60g
Seafood mix 120g
Cabbage 50g
Spring onions 2
Egg 1
Salt a little
Water 1 tbsp
Vegetable oil 2 tbsp
Tonkatsu sauce as required
Mayonnaise as required
Bonito flakes, green laver (optional) as you like

Method

Break the spaghetti into half and boil in salted water.

Put the flour, egg, seafood mix (including juice), chopped cabbage and spring onions, salt and water in a bowl.

Mix thoroughly.

Drain the cooked spaghetti and add to the bowl at Step 3.

Put 1 tbsp vegetable oil in a frying pan and heat on medium. Add half the mixture from Step 4 and press down lightly with a fish slice to make a flat round pancake. Don't move it.

Turn it over when it's firm and fry on the other side. Repeat to make another pancake with the rest of the mixture.

Transfer to a serving dish and drizzle the tonkatsu sauce (or HP sauce), mayonnaise and bonito flakes as you like - enjoy!

Tips & Note

●I used a seafood mix from a supermarket, use the juice to give a lovely flavour
●If you spread it flat and thin in the frying pan, it will be crispy and delicious
●At Step 5, fry it well so it's easier to turn over
