Seafood Chowder with Mackerel, Sweetcorn and Broccoli

I made this with smoked mackerel, corn and broccoli - it will definitely warm you up.

Ingredients

Potatoes (medium) 2
Butter 1 tsp
Bacon rashers 2
Onion (medium) 1
Sweetcorn 1 cup
Broccoli 1/2
Smoked mackerel fillets 2
Stock granules (fish or vegetable) 1 tbsp
Milk 500ml

Method

Dice the potatoes 1cm square and cut the bacon into strips. Finely chop the onion and make rectangles of the broccoli stalk. Keep the florets aside. Roughly chop the mackerel.

Put the butter and bacon into a pan and fry on medium heat. Add the onion and fry further.

Add the potatoes, milk and stock granules and simmer on medium heat for 5 minutes.

When the potato is cooked, mash roughly to still keep some texture.

Add the broccoli stalk and sweetcorn and simmer again for 5 minutes.

Add the mackerel and broccoli florets, cooking for a further 3 minutes. Be careful to keep the mackerel chunky.

When the broccoli is cooked and becomes dark green, put into soup bowls and serve with double cream and cheese if you like.

Tips & Note

The soup could easily burn once you put in the milk and butter so keep the pan on a medium heat.
You can add any additional ingredients depending on which type of smoked mackerel you use (some are with black pepper).
You could use clams or salmon, tuna or smoked haddock instead of mackerel.
