Chocolate Eton Mess

Eton Mess is traditionally double cream and strawberries, but I made this in a chocolate version.

Ingredients

Chocolate (80% cocoa) 80g
Your favourite liqueur (Cointreau, creme de cassis, brandy) 1 tsp
Hot water 60ml
Sugar (granulated or caster) 2 tbsp
Double cream 170ml
Meringues 4
Raspberries 150g

Method

Grate the chocolate in a bowl and microwave for 90 seconds or melt in a bain marie.

Add a bit at a time, the sugar, liqueur and hot water, whisking well.

Add the double cream and whisk until fluffy and soft peaks. Transfer to dessert glasses.

To make this as a firm mousse, keep in the fridge for one hour.

Just before serving, crumble the meringue and add to the glasses. Decorate with the raspberries and serve.

Tips & Note

You can use bananas, strawberries, figs or oranges instead of raspberries. Don't add too much sugar, as the sweetness comes from the meringue.
