No Fry Fish Fingers

Make lots and freeze...they'll come in handy!

Ingredients

Your favourite white fish (cod this time) 500g
Water 100ml
Flour 4 tbsp
Egg 1
Breadcrumbs as required

Method

Mix the water and flour well and add the egg. Mix well to make a batter.

Cut the fish into 6-7cm long pieces and put into a bag. Add some flour and shake to coat.

On the left is breadcrumbs, the middle is the batter and the right is the flour-dredged cod.

Shake off any excess flour from 5 pieces of the cod and run through the batter one at a time with your right hand.

Put into the breadcrumbs, again with your right hand.

With your left hand, grab a handful of breadcrumbs and liberally coat the cod pieces. Transfer to a plate (with your left hand).

If you want to freeze them, do it here. If you want to cook them now, follow the steps below.

You can now cook them in the oven (or fry if you want to - if they're frozen, have the oil at a slightly lower temperature).

Put some foil on an oven tray and place the fish fingers on top. Preheat the oven 175C.

If you have spray oil, spray plenty on top, turn over and spray again.

You can brush oil on both sides if you don't have spray oil.

Put the tray in the oven for 15 minutes - they're ready. Serve with Aurora sauce (equal quantities of mayonnaise and ketchup).

Tips & Note

The batter at Step 1 makes the breadcrumbs stick easily and also stops the fish from drying out in the freezer.
