Deep Fried Sprats in Sweet & Sour Sauce

I tried lots of different recipes using sprats, but this is my favourite, I think it goes well with sweet & sour sauce.

Ingredients

Sprats 20
☆Noodle Stock (mentsuyu) 3 tbsp
☆Honey 1 tsp
☆Sugar 2 tbsp
☆Mirin 2 tbsp
☆Water 4 tbsp
☆Vinegar 9 tbsp
☆Dashi granules (hondashi) a pinch
Potato starch as required
Chopped dried chilli if you like
Carrot 1
Onion 1/2

Method

These are the sprats from Morrisons. Pat dry and lightly season with salt and leave for 10 minutes.

Dredge with potato starch.

Deep fry 180C for 4-5 minutes. Remove onto kitchen paper to drain excess oil.

Thinly slice the onion and make fine strips from the carrot. Put both into a sauce made from all the ☆ingredients.

Add the chilli flakes, then put the fried sprats into this sauce to marinate. Keep in the fridge overnight.

Tips & Note

The noodle broth is very useful for lots of tasty dishes. With vinegar, it makes dishes less sour. If you don't have honey, you can use golden syrup.
