Grilled Liver with Asian Dressing

Ingredients

Chicken liver 200g
Salt 2 tsp
Sesame oil 2 tsp
Sushi vinegar 2 tbsp
Soy sauce 2 tbsp
Spring onions 2
Ginger 2 thumbs

Method

Soak the liver in ice cold salted water (2 tsp salt for 1 litre water) for 30 minutes.

Finely chop the spring onions and cut the ginger into fine strips. Place in a bowl with the soy sauce and sushi vinegar and mix.

Add the sesame oil to a grill pan and heat on medium. Grill the pat dried liver on both sides.

After 2-3 minutes, you'll get lovely stripes, then turn the liver over and repeat.

Add the cooked liver to the dressing and marinade for a few minutes before serving.
