Build Your Own Rice Sandwich (Onigirazu)

I had a tiny bit of leftover spicy hot aubergine in miso sauce, so used it in this rice sandwich - it turned out fine!

Ingredients

Nori sheet 1
Cooked rice 100g
Aubergine miso (leftover) a little
Frozen spinach cube 1
Soy sauce 1 tsp
Carrot 50-60g
Salt a pinch
Noritama (rice seasoning) 1 tbsp

Method

Cut the carrot into strips then sprinkle with the salt and microwave for 30 seconds. Drizzle the soy sauce on the frozen spinach and microwave for 1 minute.

Sprinkle the noritama on the rice and mix.

Place some cling film on a chopping board and lay the nori sheet on top in a diamond shape. Spread half the rice in a flat round in the centre.

Top with the cooked carrot and spinach and the aubergine miso.

Cover with the remaining rice.

Fold in the top and bottom corners of the nori sheet with the cling film and press firmly in the middle.

Fold in the left and right corners and secure in the middle by pressing firmly.

Wait 4-5 minutes for it to firm up then cut with a wet knife (including the cling film).

You can cut diagonally or square. Remove the cling film before serving.
