Smoked Salmon & Avocado Rice Sandwich (Onigirazu)

This becomes a 'luxury' sandwich because you're adding lumpfish caviar!

Ingredients

Nori sheet 1
Cooked rice 100g
Smoked salmon for sandwiches 1
Avocado 1/2
Lumpfish caviar 2 tsp
Mayonnaise 1 tsp
Soy sauce 1/2 tsp

Method

Here are the ingredients. I used lumpfish caviar from Waitrose (£2 for 50g).

Put some cling film on your chopping board in a diamond shape. Place your nori sheet on top, in a diamond shape. Place half the rice in the centre and flatten out with a spoon.

Place the sliced avocado, salmon and caviar on top of the rice. Drizzle with mayonnaise and soy sauce.

Cover with the remaining rice.

Lift the top and bottom corners of the nori and cling film and bring to the centre. Keep pressed for a while until it sticks together.

Repeat with the left and right corners. Completely wrap tightly with the cling film and press firmly.

Leave for 4-5 minutes for the nori to stick to the rice and become firm. Just before slicing, press firmly into a good solid shape.

Slice to create 2 triangles. Remove the cling film and serve attractively on a dish.

Tips & Note

●When you top the nori sheet at Step 3, visualise how the finished slices will look and arrange artistically.
