Ingredients

Chinese leaves bunch 1/4
Shiitake mushrooms 4
Salmon fillet 150g
Salt as required
Sesame oil or vegetable oil 1-2 tbsp
Eggs 3
Dashi stock 100ml
Sugar 1 tbsp
Light soy sauce 1-2 tbsp

Method

Slice the Chinese leaves and shiitake mushrooms.

Boil the Chinese leaves in salted water. Transfer to cold water and soak then drain away the water.

In the same pan, add the bitesize pieces of salmon and boil lightly.

Heat a frying pan with the oil and fry the Chinese leaves, mushrooms and salmon.

Mix the eggs, dashi stock, sugar and soy sauce in a bowl then pour into the frying pan.

Put the frying pan in a preheated oven 200C (GM6).

Cook for 20 minutes until it's nicely browned and the egg is fluffy.

Transfer to a serving dish and serve with grated apple ponzu vinegar if you like
