Carrot Spring Rolls

It's great at a home party.

Ingredients

Carrots 300g
Green beans 24
Bacon 12 rashers
Spring roll wrappers 12
Flour 2 tbsp
Vegetable oil (for frying) as required
Sauce:
Mayonnaise 3 tbsp
Miso paste 1/2 tbsp
Chinese chilli bean sauce 1/2 tsp
Soy sauce 1/2 tsp

Method

Chop the ends off the green beans. Trim the bacon. Prepare all the sauce ingredients in advance by mixing together in a bowl.

Peel the carrots and cut into 5mm square strips the same as the green beans.

Add 3 tbsp water to the flour to make a glue.

Put the bacon rasher, carrots and beans on the spring roll wrappers and roll up by pressing down the contents. Use Step 3 to glue down the loose ends.

Heat the vegetable oil 150C and deep fry the spring rolls until brown and crispy.

Serve with the sauce.

Tips & Note

●If the spring roll contains too much air, it will explode in the hot oil, so take care to press it down flat when rolling.
