Fried Rice with Minced Beef and Omelette

Ingredients

Minced beef 100-150g
Shallots or onions 1-2
Garlic 1 clove
Crushed chilli 1 tbsp
Gochujang 1 tbsp
Miso 1 tbsp
Soy sauce 2 tsp
Sugar 1 tbsp
Vinegar 1 tsp
Vegetable oil as required
Cooked rice for 4 people
Eggs 4-8
Milk as required
Butter as required
Salt & pepper as required
Lettuce leaves 4
Dipping sauce:
Nori sheet as required
Sesame seeds as required
Crushed chilli as required
Soy sauce as required
Sesame oil as required

Method

Put the vegetable oil in a frying pan and add the minced beef and fry until brown and separate. Remove to a plate.

In the same pan add some more oil and fry the finely chopped shallots until soft.

Add finely chopped garlic and chilli and mix well. Add gochujang, miso, vinegar, soy sauce and sugar and mix.

Add a touch of water and reduce. Season to taste.

Add the cooked rice and mix well and fry.

Crack the eggs in a bowl, add milk salt & pepper and mix well.

Put the butter in a frying pan and add the eggs to make a soft omelette.

Mix all the sauce ingredients together in a bowl.

Put the beef and rice mixture from Step 5 into a serving dish and top with the omelette. Serve with the lettuce. Put the sauce alongside.

Put a scoop of beef and rice and some egg in the lettuce leaves and dip into the sauce to enjoy.
