Halloumi Cheese Salad

A wonderful side dish, nice to have with drinks.

Ingredients

Halloumi cheese 1
Peppers (different colours) 3
Tomato (medium) 5
Flour 1 tbsp
Olive oil 1 tbsp
[Dressing]
Extra virgin olive oil 3 tbsp
Lemon juice 2 tsp
Balsamic vinegar 1/2 tsp
White vinegar 1 tsp
Sea salt 1/2 tsp
Pepper a little
Mint leaves as required

Method

Grill the peppers whole. Rotate occasionally, they will be done in about 15 minutes.

In the meantime, peel the tomatoes - plunge into boiling hot water first before easily removing the skin. Deseed, then chop into 3cm dice.

Finely chop the mint leaves, mix with the other dressing ingredients.

Once the peppers are grilled, peel and deseed before chopping into 3cm dice.

Mix the peppers and tomatoes in the dressing and keep in the fridge.

Cut the halloumi into half and slice into 1cm thick pieces. Pat dry and dredge lightly with flour.

Pan fry the halloumi in a bit of oil on medium heat until golden.

Mix together the halloumi and salad from Step 5 and serve on a dish.
