Italian Sauteed Cucumber

Ingredients

Cucumber 1
Olive oil 2 tbsp
Garlic 2 cloves
Bacon 50g
Salt & pepper a pinch each
Balsamic Glaze as required

Method

Cut the cucumber into quarter lengthwise and smash with a rolling pin.

Cut each quarter in half, then again into fingers.

Put the olive oil in a frying pan and add the crushed garlic. Cook on a low heat.

When you begin to smell the garlic, add the shredded bacon and fry until crispy.

Add the cucumber pieces, and season to taste. Continue to fry.

Serve onto a plate - the secret weapon is the balsamic glaze over the top. It's now ready to eat.

Tips & Note

Watch out for the cucumber water spraying out when you smash it, so wear an apron.
If you de-seed the cucumber first, the final result will be less watery.
