Azuki Bean Pound Cake

Just add azuki beans into a basic pound cake recipe - it tastes wonderful!

Ingredients

Eggs (medium) 3
Self raising flour 150g
Sugar 140g
Butter 80g
Honey in a bit of water 1 tbsp
Vanilla extract 2-3 drops
Tinned sweet azuki beans 190g

Method

Melt the butter in a microwave, add the egg yolks and mix well. Add the sugar and whisk until light and fluffy.

Sift in the flour and lightly fold in. I used this McDougall's brand.

This is the tin of sweet azuki beans, available at Japanese food stores in London.

Whisk the egg whites for 1 minute until they're soft peaks.

Add the azuki beans into Step 2 and half of the egg whites. Mix lightly. Add the remaining egg whites and lightly mix again.

Pour into a baking tray and bake in a preheated oven 180C for 40 minutes. Check with a skewer that it comes out dry, then it's ready.

It looks like this when it's done. If you keep overnight, it will be lovelier.

Tips & Note

Once you add the flour, only mix it lightly to get a nice light sponge.
