Broccoli Fried Rice with Mustard

The green broccoli with brown wholegrain mustard looks great in this rice dish.

Ingredients

Broccoli 100g
Cooked rice for 1
Garlic 1 clove
Olive oil 1/2 tbsp
Pine nuts 1/2 tbsp
Salt & pepper as required
Flavourings:
Anchovy fillet 1
Wholegrain mustard 1.5 tbsp

Method

Dry roast the pine nuts in a frying pan (no oil).

Finely chop the broccoli. Chop the anchovy.

Put the olive oil in a frying pan and heat on medium. Add the finely chopped garlic. Add the broccoli from Step 2 and fry on high heat.

Add the flavouring ingredients and the cooked rice. Add the pine nuts and season with salt & pepper.

Tips & Note

▼Chop the broccoli as finely as possible at Step 2 for the dish to be really green when ready. Separate into floret and stalk and add the stalk first before the florets when you fry it so it cooks evenly.
