Deep Fried Sardines on Rice

Ingredients

Cooked rice for 2 people
Sardines in Oil (tin) 2
Spring onions 2
Potato starch or cornflour as required
Vegetable oil for frying as required
Mayonnaise as required
Cayenne pepper as required
Lemon wedges 2
Seasonings
Soy sauce 1 tbsp
Grated ginger 1/2 thumb
Sake or white wine 2 tbsp

Method

Finely chop the spring onions.

Put the sardine carefully onto a flat plate. Add all the seasoning ingredients for 5-10 minutes.

Dredge the sardines with the potato starch and dust off the excess. Deep fry on high heat (180C).

Put the cooked rice into a small bowl, place the deep fried sardines on top. Garnish with the spring onions and top with mayonnaise and cayenne pepper, and serve with the lemon wedges.

Tips & Note

●You can eat this as it is without the rice, if you like.
