Kyoto-Grilled Chicken Wings (Saikyo Yaki)

Marinate the chicken in miso sauce to give a lovely deep taste to this popular dish.

Ingredients

Chicken wings 4
Miso sauce:
Miso (white) 16 tbsp
Sake 4 tbsp
Mirin 4 tbsp
Sugar 4 tbsp
Salt a pinch

Method

Sprinkle the salt lightly onto the chicken and wrap in kitchen paper for 20-30 minutes to remove any moisture.

Put the sake, mirin and sugar in a small pan and turn the heat to medium to dissolve the sugar. Make sure it doesn't boil.

Put the miso into a large bowl and pour in Step 2 a bit at a time and mix well.

Pour Step 3 into a plastic container and add the chicken wings. Cover with cling film and put the lid on. Keep in the fridge overnight.

Just before grilling, wash off the marinade under running water then pat dry.

Grill or oven bake in a 200C preheated oven for 20 minutes. When nicely browned all over, it's ready.

Tips & Note

●If you grill or bake with the miso paste on, it will burn easily so wash the chicken well. Don't worry, the chicken will have absorbed the flavours well overnight.
