Purple Potatoes with Sesame

You can use any sweet potato from white, orange or purple but I found purple to be the sweetest. I made this traditional Japanese snack.

Ingredients

Purple potatoes 250g
Sesame oil 2 tbsp
Brown sugar 2 tbsp
Soy sauce 1 tbsp
Vinegar 1 tsp
Water 1 tbsp
Sesame seeds 1 tbsp

Method

Wash the potatoes with the skin on and chop into bitesize pieces. Soak in water for 10 minutes. Drain then pat dry and microwave for 5 minutes until cooked.

Put the sesame oil in a frying an on medium heat. Add the potatoes and brown evenly. When nicely crispy, remove excess oil from the pan with kitchen paper.

In the meantime, mix together the brown sugar, soy sauce, vinegar and water in a bowl. Turn the frying pan heat down to low and pour in the sauce. Turn up the heat and bring to the boil.

As it caramelises, mix with the potatoes well. Garnish with the sesame seeds and serve.

Tips & Note

Microwave the potatoes until they're really soft. If you use white or orange potatoes, add a bit more sugar as they are less sweet.
