Steamed Chicken Wings with Yuzu

The instant zing of the yuzu is a lovely flavour sensation.

Ingredients

Chicken wings 8
Chinese leaves bunch 1/6
Yuzu 1 tsp
Kombu as required
Sake 2 tbsp
Sea salt 1 tsp
Ponzu vinegar as required
Chilli powder as required

Method

Trim off both ends of the chicken wings and rub with salt. Keep aside for 15 minutes.

Wet the kombu and put in a pan.

Place the chopped Chinese leaves on top and cover with the chicken wings. Drizzle with yuzu and sake.

Put the lid on and steam for 15-20 minutes. Turn the heat off and steam on residual heat for 5 minutes. Sprinkle chilli powder if you like and drizzle ponzu vinegar.

I used the freeze-dried yuzu this time, but you can use yuzu pepper if you have it.

Tips & Note

●If you lightly boil the chicken beforehand, you can steam them for a bit less time.
