Sweet Potato and Pork Stir Fried in Black Vinegar

Goes perfectly with cooked rice.

Ingredients

Sweet potato 200g
Leek 1/2
Green pepper 1
Pork loin 200g
Finely chopped garlic 1 clove
Seasonings:
Black vinegar 4 tbsp
Rice syrup or granulated sugar 2 tbsp
Soy sauce 1.5 tbsp
Mirin 1 tbsp
Thickener:
Potato starch or cornflour 1 tbsp
Water 1 tbsp
Rice bran oil as required

Method

Slice the leek 5mm thin. Shred the green pepper and pork loin.

Stir together 2 tsp sake, 1 tsp soy sauce and 1 tbsp potato starch.

Wrap the sweet potato in cling film and microwave for 2.5 minutes (600W)

Turn the potato over and microwave again for 2.5 minutes. Cool and slice into 7mm thick slices, then cut into half moon shapes.

Put the rice bran oil (or vegetable oil) in a frying pan and add the chopped garlic.

Add the pork loin and fry until nicely browned. Remove from the frying pan.

Fry the leek and green pepper seasoned with salt & pepper. When softened, return the pork to the pan.

Add the sweet potato and all the seasoning ingredients . When everything is cooked, add the thickener.

Tips & Note

●This black vinegar is available at Waitrose: Cooks' Ingredients Rice Vinegar Black Chinese (250ml) or at Tesco:Ingredients Black Rice Vinegar or you can probably find it a Chinese supermarket.
●The time for cooking at Step 4 is an average time, so adjust to suit your microwave settings.
