Yaki Soba Fried Noodles with Pork & Vegetables

Ingredients

Smoked pork belly 120g
Frozen prawns 100g
Onion 1/2
Green pepper 1/2
Carrot 1
Celery 1
Spinach a handful
Salt & pepper as required
Chicken stock 100ml
White wine 2 tbsp
Soy sauce 3 tbsp
Mirin 2 tbsp
Chinese chilli bean sauce 1 tsp
Shrimp paste 1/2 tsp
Potato starch in water as required
Eggs 2
Yaki soba noodles for 3 people

Method

Cut the pork belly into 12 slices 2mm thick. Remove the hard rind and cut into bitesize pieces. Chop the vegetables into bitesize pieces.

Put the oil in a pan and add the onion, celery and carrot and fry. Add the green pepper and fry.

When the vegetables are soft, add the pork and fry. Add the frozen prawns.

Add all the seasonings from salt & pepper to shrimp paste and adjust for flavour. Add the potato starch in water to thicken the sauce.

Add the spinach.

In a large frying pan, fry the yaki soba noodles in oil.

In the meantime, put some water in a small bowl and crack the eggs in the water. Microwave for 3-4 minutes to make quick poached eggs.

Transfer the fried noodles onto a serving plate and pour over the sauce. Top with a poached egg.
