Smoked Kipper Potato Cakes

A big favourite with kids of any age.

Ingredients

Smoked kippers 1/2 pack
Potatoes (for baking) 2 (400g)
Sunflower oil as required

Dashi granules (hon-dashi) 1.5 tsp
Green laver 2 tsp
Glutinous rice flour 2 tbsp
Water 1-3 tbsp

Method

Boil the baking potatoes with the skin on.

In the meantime, wrap the kippers in kitchen paper and microwave (600W) for 1 minutes. Remove any bones and skin, the cut into 10 pieces.

Mash the cooked potatoes and mix with all the ingredients A. Adjust the moisture to make a firm mix.

Divide the mash into 10 and sandwich a kipper piece in the middle. Cover the kipper and make into flat cakes.

Put some oil in a frying pan on medium heat. Pan fry the cakes on both sides until nice and golden before serving.

This is the glutinous rice flour available in Chinatown in London.

Tips & Note

●You can also mash the kipper with the potato if you prefer.
