Colourful and Healthy Chicken Salad

Ingredients

Chicken breast 120g
Green leaf salad leaves (rocket, baby kale, cress) 15-20g
Tomatoes 50g
Cucumber 50g
Extra virgin olive oil 1 tbsp
Balsamic vinegar 1 tbsp
Honey as required
Salt 1/4 tsp

Method

Boil the chicken in salted water with a bot of white wine. Pat dry and shred coarsely by hand. Mix the ingredients for the dressing (from olive oil to salt).

Lay the salad leaves out on a dish and top with the chicken. Garnish with finely diced cucumber and tomatoes and drizzle over the dressing.

Tips & Note

When you put the chicken on to boil, turn the heat off as soon as the meat starts to turn white and put the lid on. It will be a lovely moist chicken breast.
