Stir Fried Chickpeas with Bacon

Ingredients

Tinned chickpeas 1/2-1
Onion 1/2
Garlic 1 clove
Bacon 150g
Baby spinach 100g
White wine 3 tbsp
Light soy sauce 1 tbsp
Salt & pepper a little

Method

Drain the chickpeas, wash the baby spinach and drain.

Finely chop the onion and garlic, roughly chop the bacon.

Put some oil in a frying pan and fry the garlic on medium heat. Add the onions.

Season with salt & pepper and fry until soft. Add the bacon, chickpeas and white wine. Allow the alcohol to evaporate.

Add the soy sauce and the baby spinach and stir in. it's ready to serve.

Tips & Note

●If you want to cook chickpeas instead of using tinned ones, lightly wash and soak in water overnight then boil on medium heat before simmering for 40 minutes.
