Broccoli Stalk Kinpira

Never waste the broccoli stalk - it's so sweet and delicious!

Ingredients

Broccoli stalk 1
Carrots 2
Parsnip 1/2
Sake 2 tbsp
Dashi stock (hondashi) 60-80ml
Dried chilli 1
Sugar 2 tsp
Soy sauce 1.5 tbsp
Mirin 1 tsp

Method

Peel the broccoli stalk then cut into fine strips. Repeat with the carrot and parsnip.

Put the dried chilli into some warm water, deseed then roughly chop.

Put some sesame oil in a frying pan and add the dried chilli. Turn the heat on and fry.

Add the carrots strips and fry for 1-2 minutes. Add the broccoli and parsnips and fry for 3 minutes on medium heat.

Add the sugar and stir in. Add the sake, stock and mirin and simmer on medium high heat until the liquid is completely reduced.

Turn the heat off. Sprinkle with some crushed sesame seeds if you like, before serving.

Tips & Note

If you don't like spicy food, adjust how much dried chilli you use.
