Easter Biscuits

Delicious with a bit of spice that says spring is here!

Ingredients

Flour 220g
Butter 110g
Caster sugar 110g
Egg (yolk and white separate) 1
Salt a pinch
Mixed spice 0.5-1 tbsp
Currants 55g
Mixed peel 30g
Milk 3 tbsp

Method

Put room-temperature butter and sugar into a bowl and mix together with a hand blender until it turns pale yellow.

Add the egg yolk to Step 1 and mix well.

Sift the flour, spice powder and salt into Step 2. Fold it gently. Add the currants and mixed peel and fold in gently again.

Add the milk to Step 3 and mix into a soft dough

Preheat the oven 160C (Gas mark 3). Place a baking sheet onto a baking tray.

Dust a chopping board and place Step 4 on it. Roll out to 5mm thick. Cut out your preferred shapes with a cutter.

Put onto the baking sheet and into the oven for 10 minutes.

Remove from the oven and brush the egg white onto each biscuit.

Sprinkle sugar over the egg white and put back in the oven for 5-10 minutes.

The biscuits are ready when they are a pale brown colour. Allow to cool, then serve.

Tips & Note

●The fluted cutter is a traditional shape, but you can use chicks or teapot shapes to make it more fun.
