Deep Fried Skate

A mild tasting fish but easy to use because it comes without bones.

Ingredients

Skate (ray wings) 2 small (4-500g)
Soy sauce 2 tbsp
Ginger 20g
Mirin 1 tsp
Potato starch in a bit of water as required
Vegetable oil as required

Method

This skate doesn't look that attractive.

Slice the skate into bitesize pieces. It has soft bones but these can be sliced.

Soak the skate pieces into a sauce made of soy sauce, ginger juice and mirin for 30 minutes to 2-3 hours.

Pat the fish dry and dredge with potato starch.

Deep fry in vegetable oil 170C. The thinnest parts of the fish will be very crispy.

Tips & Note

Skate can be used for fish and chips or as meuniere. It's a soft white fish with edible soft bones. It may not look that delicious, but it tastes fantastic and is easily prepared.
