Butternut Squash & Bacon Soup

Just simple ingredients with no additional flavourings.

Ingredients

Butternut squash 1/2 (420g)
Bacon rashers 2
Butter 20g
Water 300ml
Milk 200ml
Salt 1 tsp

Method

Cut the butternut squash into half lengthways. Remove the seeds and peel before chopping roughly.

Put the butter in a pan and fry the sliced bacon (1cm thick) and butternut squash on medium heat.

When the bacon ad squash is cooked, add the water and bring to the boil. When the squash is really soft, pour into a blender and blend to a smooth consistency.

Return the soup to the pan and add the milk and cook on medium heat, stirring with a wooden spoon.

Adjust for taste with the salt. Turn off the heat before it gets to the boil and transfer to a soup bowl.

Use Maldon salt.

Or Cornish sea salt.

Tips & Note

●You can make this delicious soup without the bacon, but adding it gives a real depth of flavour.
