Spicy Bacon & Potato Warm Salad

Ingredients

Potatoes 500g
Onions (small) 2
Bacon rashers (rindless streaky) 8
Chinese chilli bean sauce 1.5 tsp
Sugar 2 tbsp
Soy sauce 3 tbsp
Green peas (frozen) 4 tbsp
Mirin 1 tbsp
Sesame oil 1 tbsp

Method

Cut the potatoes (hard small ones like New potatoes) into 4 wedges each and soak in water to remove the starch before draining.

Cut the bacon into 2cm strips. Peel the onions and cut into 8 wedges each.

Put the sesame oil in a pan and heat. Add the chilli bean sauce, bacon, onion and potatoes and fry for 2-3 minutes.

Add 300ml water to just cover the ingredients and add the sugar, soy sauce and mirin and bring to the boil.

Turn the heat down a little and simmer for 15 minutes, stirring occasionally. Reduce the sauce.

Add the green peas and stir in for 2-3 minutes before serving.
