Lemon Curd Crepe Millefeuille

Sweet and sour, the crepes taste really delicious with the hint of lemon.

Ingredients

Flour 150g
Sugar 30g
Eggs 3
Milk 375ml
Melted butter 30g
Vanilla extract 6-8 drops
Lemon curd (shop bought) as required

Method

Prepare two separate bowls: in one put the flour and sugar and in the other, eggs, milk and vanilla extract. Mix both well.

Combine into one bowl and add the melted butter. Mix well. I used a hand blender for 1 minute.

Pour some of the batter into a 20cm diameter frying pan with some butter. Make as many pancakes as you can, but don't add use any more butter to fry them.

As you cook each pancake, spread 1 tsp lemon curd on top and stack on a plate.

This is the lemon curd. Just arrange each pancake with lemon curd in order.

When all the pancakes are stacked, put in the fridge to set slightly. It's ready to serve with some vanilla ice cream, if you like.
