Rhubarb & Cream Cheese Custard Galette

Sweet and sour rhubarb on a crispy pastry base - mmmm, really delicious!

Ingredients

Rhubarb 180g
Shortcrust pastry 250g
Granulated sugar (for sprinkling) 2 tbsp
Low fat cream cheese 150g
Granulated sugar 1 tbsp
Cornstarch 1 tbsp
Lemon juice 2 tsp
Egg yolk (medium) 1

Method

Leave the cream cheese at room temperature. Mix together with all the ingredients from granulated sugar to the egg yolk.

Lightly dust a chopping board and roll out the pastry thinly.

Place the pastry onto a lined oven tray and prick with a fork (but not the edges).

Cut the rhubarb into 1.5cm lengths and sprinkle with the granulated sugar. Leave for 5 minutes.

Put Step 1 in the centre of the pastry and cover with the rhubarb evenly.

Fold in the edges of the pastry and press down lightly to make a border.

Put into a preheated oven 190C for 30 minutes. It's ready.

Tips & Note

This dish is not that sweet, but you can adjust the sugar to your taste. The amount of sugar will also depend on how sharp the rhubarb is.
