Cod Meuniere in a Sweet and Sour Sauce

A mix of French and Chinese cooking but they work really well together!

Ingredients

Cod fillets 2
Yellow pepper 1/4
Green pepper 1/4
Onion 1/2
Tomato (medium) 1
Garlic puree 1 tsp
Vinegar 3 tbsp
Tomato ketchup 1 tbsp
Soy sauce 2 tbsp
Mirin 1 tbsp
Chicken stock cube 1
Sugar 1 tsp
Water 50-100ml
Potato starch in a bit of water as required

Method

Here are the ingredients.

Season the cod with salt & pepper and keep aside for 10 minutes. Dredge with some flour and remove any excess.

Put 1 tbsp butter in a frying pan on medium heat.

Add the cod and baste with the butter.

Fry for 5 minutes each side (baste all the while) then turn the heat off and continue cooking on residual heat before removing to a plate.

Make the sweet and sour sauce: put all the chopped vegetables (except the tomato) into the same frying pan and fry.

When they're cooked, add all the sauce ingredients (from garlic puree to water). Season to taste.

Add the chopped tomato and potato starch to thicken.

Transfer the cod from Step 5 to a serving dish, then pour over the sauce from Step 8 - it's ready to enjoy.

Tips & Note

Basting is called 'arroser' in French - it not only keeps the ingredients nice and moist but transfers the flavours from the fats into them.
