Indian Okra Curry

Enjoy this curry with rice or naan bread. It's not so hot and spicy, so kids can also enjoy this vegetarian dish (it's also for vegans).

Ingredients

Okra 20
Tomato (medium) 1
Onion (medium) 1
●Cumin powder 1 tsp
●Turmeric 1/2 tsp
●Coriander powder 1 tsp
●Chilli powder 1 tsp
Water 2 tbsp
Garlic (grated) 1 clove
Ginger (grated) 1 thumb
Vegetable oil 2 tbsp
Salt & pepper a little

Method

Blanch the tomato in hot water to remove the skin. Roughly chop it. Wash the okra then roll them slightly and cut into 2.5cm lengths.

Put half the amount of oil into a frying pan on high heat and add the okra. Sprinkle with salt and shake the pan.

When it's cooked, remove to a plate.

Put the remaining oil in the pan and fry the garlic and ginger on low medium heat.

Add the finely chopped onion and fry until soft.

Add the tomato and fry until it mashes up, then add the ●ingredients and fry for a further 2 minutes.

Add the water and return the okra to the pan. Combine nicely and season with salt & pepper before serving.

Tips & Note

Make sure to fry the okra on high heat at Step 2.
