Mushroom Donburi

Ingredients

Variety of mushrooms 250g
Cooked rice for 2 people
Chives as required
Chilli pepper as required
Plain flour 4 tbsp
Vegetable oil for frying as required
Sauce:
Dashi stock 200ml
Granulated sugar 1 tbsp
Mirin 1 tbsp
Soy sauce 2 tbsp

Method

Clean the mushrooms with kitchen paper, never wash them with water. Remove the stalks if you want.

Put all the sauce ingredients into a small pan and boil, then turn off the heat.

Dredge the mushrooms with the flour and deep fry in pre-heated 170C vegetable oil for 1 minute.

Run all the mushrooms through the sauce and remove, placing onto the rice.

Sprinkle lots of chopped chives or red chilli pepper over the mushrooms if you like.

Tips & Note

It's fun to use a variety of mushrooms to get a good taste and look to the dish. Keep the mushroom pieces quite large to enjoy their texture.
