Pannacotta with Red Grape Syrup

It looks so lovely, the white pannacotta and a glaze of ruby red.

Ingredients

【Pannacotta】
Double cream 300ml
Milk 100ml
Caster sugar 50g
Elderflower cordial 2-3 tbsp
elderflower cordial
Vanilla extract 1/2 tsp
Lemon zest 2 strips
Gelatine sheet 3g
【Red Grape Syrup】
Red grapes 1/3 bunch
Sugar 2-3 tbsp
Elderflower cordial 1 tbsp
Lemon juice 1/2
Cornflour in 1 tbsp water 1 tsp

Method

Soak the gelatine in water to soften. Use 2g if you prefer a softer pannacotta, or 4g if you like it firmer.

Put the cream, sugar, lemon zest and cordial in a pan and heat to just before it boils. Turn off the heat.

Squeeze the water out from the gelatine, add to Step 2 and allow to dissolve.

Add the milk and vanilla extract to Step 3, taste and adjust for sugar.

Push Step 4 through a sieve to make it really smooth and allow to cool completely.

Pour into pannacotta dishes and put in the fridge until firm (4 hours to one day).

Make the syrup: put all the ingredients in a pan and bring to the boil. Remove any scum.

Reduce the sauce then add the cornflour. Turn off the heat and allow to cool completely. Put in the fridge.

Remove the pannacotta and place on a serving dish. Pour the syrup on the top.

This is the elderflower cordial I used. Check its sweetness before using.
