How to Freeze and Defrost Fresh Fish

Ingredients

Fish fillets
Or whole fish (organs removed)
Cling film
Ziploc bags

Method

Wrap the fish tightly in cling film.

Put into a ziploc bag and squeeze out the air. Put into the freezer, it can stay for up to 3 weeks.

When you are ready to defrost it, put some iced water in a tray big enough to fit the fish.

Soak the fish (still in the bag) in the tray. Weigh it down to keep it immersed.

After 15 minutes, the bag will have ice on it. Remove the ice but keep the bag in the water.

In 30 minutes, the fillet will be half defrosted (45 minutes for a whole fish). You can start cooking it now if you need to.

This is the ice cold defrosting method. A freezer is usually -18C and a fridge is 4C, there's a huge difference and it will affect the ultimate flavour of the fish if you don't follow this method.

Defrosting the fish in ice water first is far better, as the flavour of the fish is retained as it slowly reaches the temperature of the fridge or room temperature for cooking.
