Ingredients

Chicken breast fillets 4
Garlic 1 clove
Salt 1.5 tsp
Sugar 1 tsp
Allspice 1/2 tsp
Paprika 1/2 tsp
Dried thyme 1 tsp
Pepper 1/2 tsp
Sparkling water 100ml
Egg 1
Water 1 tbsp
Plain flour 4 tbsp
Breadcrumbs 100g
Vegetable oil for frying as required

Method

Pierce the chicken with a fork, this will make the cooking time quicker and will also absorb the marinade. Grate the garlic.

Put the chicken in a bowl and add the garlic, salt, sugar, allspice, paprika, thyme and pepper.

Add the sparkling water and rub the mixture into the chicken. Cover with cling film and put in the fridge for a few hours or overnight.

Transfer the chicken to a colander and pat dry with kitchen paper.

Crack the egg in a small bowl, add the water and beat. Dredge the chicken with the flour, run through the beaten egg and coat with the breadcrumbs.

Heat the oil in a pan on medium heat. Deep fry the chicken for 1 minute.

Turn the heat down to low and fry for a further 4-5 minutes. Turn the chicken over and fry for 3 minutes until golden brown. Drain excess oil and serve with a salad alongside.

Tips & Note

The sparkling water added at Step 3 makes the chicken really tender. If you don't have any, add 1/2 tsp bicarbonate of soda into 100ml water to get the same effect. It doesn't matter if you miss out a couple of the spices.
