Squid and Celery Stir Fried in Fish Sauce

The intense deliciousness of the squid enhances the celery, so use lots of it!

Ingredients

Squid (frozen is fine) 2
Celery 4
Fish sauce (nam pla) 1 tbsp
Soy sauce 1 tsp
Sesame oil 1 tsp
Vegetable oil or olive oil 1 tbsp

Method

Slice the squid.
The ear section is quite firm but delicious, so don't waste this.

It's free to clean the squid at our fishmonger's, but it's worth asking at your local fishmonger.

This is what you would say: 'Would you be able to clean them please?'

If it's refused, please visit my blog for details how to clean it yourself.

Heat up the oil in a pan and stir fry the diagonal cuts of celery. When they are half translucent, add the squid.

Stir fry the squid until it becomes white (and not like in the photo, this is dangerous!)

The squid available in Britain is Yari-ika (spear squid).

Add fish sauce and stir fry further. Add the soy sauce and sesame oil and turn the heat off. It's ready to serve.

Tips & Note

The squid really makes the celery taste delicious, so add lots more celery than squid.
