Quinoa with a Spicy Minced Pork Sauce

It's almost Chinese style with a good flavour of spring onions.

Ingredients

Quinoa 125g
Minced pork 400g
Sake 1 tbsp
Soy sauce 3 tbsp
Miso 3 tbsp
Sugar 1 tbsp
Cucumber 1
Spring onions 2
Vegetable oil 2 tbsp
Vinegar 2 tsp
Soy sauce 2 tbsp
Tahini 3 tbsp
Chilli oil 2 tbsp
Chicken stock granules 2 tbsp
Hot water 300ml
Soya milk 300ml

Method

Wash the quinoa lightly and boil in lots of water for 15 minutes. Drain well in a colander.

Make the onion oil: put the vegetable oil in a frying pan and fry one roughly chopped spring onion on low heat (keep the other for later).

Discard the spring onions (you only need the oil). Take out 1 tbsp of the oil in a bowl.

In the same pan, fry the minced pork on medium heat in the remaining oil.

Put the sake, soy sauce, miso and sugar in a bowl and mix. Add to the frying pan and cook until reduced. Remove the pork and sauce to a large bowl.

Add the vinegar into the bowl of onion oil at Step 3. Add the soy sauce, tahini and chilli oil and mix well.

Peel the cucumber and cut into fine strips. Cut the remaining spring onion into strips.

Put the chicken stock granules, hot water and soya milk in a pan and bring to just before the boil. Pour this into the pork mixture at Step 5.

Divide equally into serving dishes in this order: quinoa, Step 7, then the pork sauce from Step 5. The chilli oil at Step 6 is optional.

Tips & Note

●Mix the ingredients at Step 5 in that order to blend well.
