Ja-Ja Mien Morioka Noodles

The Japanese citizens of Morioka who like cold noodles have their own interpretation of ja-ja noodles. You can make a soup called Chi-tan-tan using the leftover miso meat sauce.

Ingredients

Udon noodles for one
Cucumber 5cm
Ginger (grated) 1/2 tsp
【Niku-miso (miso meat sauce)】
Sesame oil 1 tbsp
Ginger (grated) 1 tsp
Garlic (grated) 1 tsp
Onion 1/2
Minced pork 100g
Oyster sauce 1 tbsp
Sugar 1 tbsp
Miso paste (red) 3 tbsp
Water 100ml
Toasted sesame seeds 2 tsp
【for Chi-tan-tan soup】
Spring onion (finely chopped) 1 tbsp
Egg 1
Chilli oil optional
Vinegar optional

Method

Put the sesame oil in a frying pan, fry the grated garlic and ginger over a medium heat. Once you sense the aroma, add the chopped onion and stir fry.

When the onion becomes translucent, add the minced pork and fry over a medium heat. When the fat from the pork becomes transparent, add the other seasonings and water and boil it down.

When all the liquid is well reduced, it's done.
Start to boil the udon noodles.

When the udon is cooked, keep the pasta water for the soup.
Rinse the noodles well, then place in a bowl and top with the cucumber cut into thin strips.

Put 3 tbsp of the miso meat sauce from Step 3 on top and add the grated ginger. Mix the meat miso sauce, udon and cucumber well. Sprinkle with chilli oil or vinegar if you like.

Once finished, put 1 tablespoon of the miso meat sauce, chopped spring onions and eggs in the same bowl. Mix well and pour in about 2 ladles of hot pasta water.
