Quick And Easy Shortbread

If you fancy something sweet but there's nothing at home, this is the perfect thing!

Ingredients

Butter 80g
Granulated sugar 35g
Self Raising Flour 120g
Salt        a pinch
Vanilla extract a few drops

Method

Melt the butter in a bowl in the microwave for 30 seconds, then add the sugar and vanilla extract. Stir well.

Add the flour and mix well to make a soft dough. Place in a plastic bag or wrap in cling film and massage to mix thoroughly. Leave for one hour.

Preheat the oven 180C. Divide the mixture and make 6 flattened balls.

Put tin foil or a baking sheet onto a baking tray and lay out the 6 biscuit shapes.

Bake for 10 minutes. The biscuits will still seem soft after 10 minutes, but will harden as they cool.

These biscuits are delicious when hot but nicer when they're cool and even better the next day.

Tips & Note

Some people say it's good to leave the dough in the fridge before baking, but it's also ok to not even leave it at all and just bake straightaway.
