Almost Tonkotsu Ramen!

There's no simple way to make an authentic tonkotsu stock at home, it's very complicated. Instead, try this simpler recipe - it's not authentic but still super delicious!

Ingredients

Polish bacon (thick slices) 6
Spring onions 2
Soft boiled egg 1/2
Nori sheet 1
Garlic 2 cloves
Vegetable oil 1 tbsp
Ramen noodles for 2 people
Tonkotsu stock:
Pork stock cubes 2
Hot water 600ml
Soya milk 400ml
Miso 2 tbsp
Marmite 2 tbsp
Soy sauce 2 tbsp
Tahini 2 tbsp
Lard (optional) 25g

Method

Cut the Polish bacon into six thick slices. You can buy it from Tesco or Morrisons.

Make a soft boiled egg, then cut in half. Finely chop the spring onions and cut a nori sheet in half.

Put two pork stock cubes into a bowl and pour in the hot water. After adding the miso, Marmite, tahini and soy sauce, mix well with a whisk to dissolve the miso.

Put the vegetable oil in a frying pan and fry the sliced garlic on medium heat. Add the bacon and fry, just lightly burning the garlic.

When the bacon is well fried, pour in the stock made at Step 3. Add the lard here if you like. Add the soya milk and heat, but turn it off just before it boils. in the meantime, cook your favourite ramen noodles.

Drain the noodles well and put in a large soup bowl. Pour the stock on top.

Add the bacon, spring onions, boiled egg and nori. Why not sprinkle some sesame seeds on top...

Tips & Note

●If you prefer a slightly sweeter stock, add 1 tsp sugar or oyster sauce
