BBQ Spicy Salmon with Sweet Miso Sauce

Ingredients

Salmon fillet 1
Salt 2 pinches
Beansprouts 50g
Leek 2-3cm
Eringi mushrooms as required
Shimeji mushrooms as required
Enoki mushrooms as required
Sake or white wine 2 tbsp
Spring onion 1
Red chilli as required
Sweet miso sauce:
Miso (red) 2 tbsp
Sugar 1 tbsp
Sake or white wine 1 tbsp

Method

Put two sheets of foils on a heat resistant dish, overlapping about 5cm in the middle, then put another sheet on top.

Put the beansprouts, sliced leek, salmon fillet and mushrooms in the middle. Drizzle 2 tbsp sake over it and season with the salt.

Mix together the sweet miso sauce ingredients in a bowl and liberally spoon over the salmon. Top with the chopped spring onion and red chilli slices.

Wrap the inner foil tightly over the ingredients to seal completely. Then loosely wrap the outer two foils over and twist the ends to look like a sweet - it makes great presentation!

BBQ or bake for 30 minutes (the preheated oven should be 200℃ or 400℉). A nice bit of butter once the salmon is unwrapped will add to the delicious rich sauce.
