Japanese Omelette Roll with Prawns (Date-Maki)

This is my version of the luxurious date-maki rolled omelette that is usually served at sushi restaurants in Japan.

Ingredients

Eggs 3
Cod 50g
Prawns 50g
Dried yams 3-4
Sugar 2 tbsp
Mirin, sake, potato starch 1 tsp each
Soy sauce, salt, dashi stock granules a little of each

Method

Re-hydrate the dried yams in water - you can get them from Chinatown in London. The picture here shows enough for 8 people.

Blend the cod and prawns. The cod must be raw or thawed but uncooked. The prawns are also better raw, but boiled prawns are OK. Knead until sticky.

Add the egg yolks and seasonings and blend further. Blend the egg whites and yams separately. Finally, mix everything together.

Put a baking sheet in an oven tin and pour in the mixture from Step 3. Cover with foil and bake for 10-15 minutes in a 180C oven. Remove the foil, turn the heat up to 200C to brown the top.

Put some cling film onto a bamboo mat and place the baked omelette on top. Roll it up and secure with a rubber band to keep the shape. Wait a little until it becomes hand hot.

The taste of the prawn and egg is so delicious.

Tips & Note

You can enjoy this without any sauce. Crab instead of prawn is also delicious.
