Sensational Fried Konjak Rice

Konjac is zero fat, low calorie and very low carbohydrate (1g per 100g). Cook konjac rice as a fried rice to make it nice and tasty. Who said diet food is tasteless!!

Ingredients

Konjac rice 1 pack (250g)
Eggs 2
Bacon rashers 3
Spring onions 2
Salt & pepper as required
Chicken stock 150ml
Sesame oil 1 tsp
Soy sauce 2 tsp

Method

This is rice made from Konjac potato. It was first introduced on Dragon's Den and successfully went into major production.

Wash the rice lightly under running water and drain well.

Here are the ingredients. Cut the bacon into small bitesize pieces and finely chop the spring onions. Beat the eggs.

No oil required. Fry the bacon on high heat until crispy then transfer to a plate.

In the same pan, add 1 tbsp of vegetable oil and heat on high. Add the beaten eggs and when half cooked, add the konjak rice.

Fry for 3 minutes, then add the chicken stock from the edge of the frying pan and mix gently. Season with the salt & pepper. Return the bacon to the pan and fry for 30 seconds.

Add the finely chopped spring onions and fry for 1 minute then pour in the sesame oil and soy sauce. Fry for a further 30 seconds, then it's ready!

Tips & Note

●the konjac rice does not absorb much flavour - unlike rice - so season the dish a little more than your usual fried rice.
