Vegetable Miso Soup with Bacon

Here's a miso soup you can eat rather than drink. You get a lovely flavour of the Polish bacon.

Ingredients

Morliny Polish bacon 60-80g
Carrot (medium) 1
Celery 2
Potatoes (medium) 2
Chinese leaves 3
Hot water 600ml
Dashi stock granules 1/2 tsp
Miso 35-40g

Method

As the root vegetables takes longer to cook, slice them thinly. Slice the bacon 2mm thick and remove the hard skin then cut to bitesize pieces.

You won't need any oil because plenty of fat comes out from the bacon. Fry the bacon on high heat for 4-5 minutes until crispy.

Stir fry the root vegetables, then add the celery and the white part of the Chinese leaves before adding the leafy parts.

Add the hot water and dashi stock granules and reduce to about 400ml. Turn the heat down to low and dissolve in the miso. That's it, you can enjoy eating this miso soup instead of drinking it.
