Deep Fried Skate with Sweet and Spicy Sauce

Ingredients

Skate wings 300-400g
Cornflour (or potato starch) as required
Oil for frying as required
Soy sauce 2 tbsp
Mirin 1 tbsp
Sake or white wine 1 tbsp
Sugar 0.5-1 tbsp
Sesame seeds as required

Method

First cut the skate vertically, as shown in the picture. It's easy to cut using kitchen scissors rather than a knife.

Dredge the skate wing pieces with plenty of cornflour - do this in a plastic bag.

Heat the oil to 180C and carefully add the skate.

When the skate floats to the surface, deep fry it, turning it over, until nice and golden.

Add the all remaining ingredients (except the sesame seeds) in a pan and bring to the boil. Run the fried skate through the sauce from Step 4 and sprinkle with the sesame seeds. Delicious, enjoy!

Tips & Note

If you like the bones as well, return the skate once again into the oil and deep fry for a further 2-3 minutes.
